YUM-YUM! This recipe was sooo good,
I ate it before I could take a picture!

YIELD: 6 servings

TIME: 30 minutes

INGREDIENTS:
• 1/2 cup canned red kidney beans, drained
• 1/4 red capsicum, diced
• 1/4 green capsicum, diced
• 1 onion, diced
• 1 tomato, diced
• 1 teaspoon canola oil
• 1 tablespoon reduced-salt tomato paste
• 2 tablespoons taco sauce
• 1 cup low-fat tasty cheese, grated
• 4 cups light corn chips
• 4 teaspoons light sour cream

DIRECTIONS:
1. Collect ingredients and equipment.
2. Prepare onion, capsicums and tomatoes.
3. Place oil in a small saucepan and lightly fry onion.
4. Add capsicums and tomatoes and cook for 2 minutes.
5. Add tomato paste, chili sauce (optional), taco sauce and beans. Mix and cook until mixture just boils.
6. Place corn chips on a baking tray. Sprinkle with sauce mixture and then sprinkle grated cheese on top.
7. Place under a hot grill and cook until cheese melts.
8. Serve with a little sour cream.
