INGREDIENTS:
• 2 medium Granny Smith apples
• 1 tablespoon sugar
• 1/4 cup warm water
• 1/4 teaspoon lemon juice
• 2 cups reduced-fat vanilla yogurt
• 1/4 cup oats, toasted
• 1/2 cup frozen berries
• 1 tablespoon reduced-fat milk
• 1 kiwi fruit
• 2 strawberries
DIRECTIONS:
1. Toast oats in oven at 180C for 3 minutes or in dry pan on top of the stove, then cool.
2. In a saucepan, add diced apple, water and sugar. Place over low heat and cook until soft – mash with a fork. Cool.
3. Heat 2 tablespoons of berries and 1 tablespoon of milk in small saucepan and blend into a sauce. Cool.
4. Once the apple is chilled, place into the bottom of two glasses.
5. Add vanilla yogurt to form a layer.
6. Then add a berry layer, top with toasted oats and decorate with kiwi fruit and strawberries.
7. Drizzle with berry sauce and serve. Can be made the day before for breakfast the next morning.
